The Dish On …
“Good to the Grain: Baking with Whole-Grain Flours” by Kim Boyce and Amy Scattergood
Baking with whole-grain flours used to be about making food that was good for you, not food that necessarily tasted good.
Kim Boyce has reinvented the wheel with this collection of 75 recipes that feature 12 different kinds of whole-grain flours, from amaranth to teff, proving that whole-grain baking is more about incredible flavors and textures than anything else.
The cookbook proves that whole-grain baking can be easily done with a pastry chef’s flair. Plus, there’s a chapter on making jams, compotes and fruit butters with seasonal fruits that help bring out the wonderfully complex flavors of whole-grain flours.

Tip of the Week: Try a CSA
Community Supported Agriculture is a way for consumers to buy local, seasonal food directly from a farmer.
How does it work? A farmer offers a certain number of "shares" to the public. Typically the share consists of a box of vegetables, but other farm products may be included. Interested consumers purchase a share, and in return receive a box of seasonal produce weekly or bi-weekly throughout the farming season.
So if you’re interested in ultra-fresh food and want to be exposed to new vegetables, consider joining a CSA. Visit www.localharvest.org/csa to find a CSA in your area and find more information about how it works.

Critic’s Cupboard: Burger King Cilantro Lime Big Fish
Remember Burger King’s Whaler? I do. It was my favorite fast food of the ’70s. Boy, do I miss that enormous sandwich loaded with lettuce and tartar sauce. Funny thing, it was always piping hot. I recall more than a few chin scalds from molten fish juice or grease or whatever it was. No matter about the pain, the sandwich was awesome.
Not since those days have I been worked up about Burger King’s fish. Well folks, the tides have turned. The cilantro lime sauce on the Big Fish is excellent, taking this standard fish sandwich to new heights. It’s still not as good as the Whaler, but it’s pretty darn scrumptious.
